Microraptor Returns in Flight Once More
Microraptor is the first coffee to reveal the Mythic class of Roastersaurus, the rarest of them all. Earlier this year I secured the only 24kg of Capulinero in the UK. Most of it sold out almost immediately, but I held back a very small amount for this exciting new branding launch. With just this final batch available, and the first ever foil Roastersaurus cards released alongside it, this is a true once only release.
 
About the Producer
Microraptor comes from Beneficio La Chumeca in Costa Rica, a pioneering farm that produces only natural coffees under the shade of banana and guineo trees. Known for their innovation and care, they create conditions for cherries to ripen slowly, developing complex sweetness and layered fruit character.
 
About the Coffee
La Chumeca selects only cherries at 22° Brix, ensuring peak ripeness and clarity. The slower maturation under shade trees builds sugars and depth, creating the foundation for Capulinero’s extraordinary cup.
 
The Capulinero Process
Capulinero is the result of an accidental three-phase fermentation. Sudden rains interrupted the process, forcing the cherries to move from anaerobic, to oxidative, and back to anaerobic once more. During this time, Capulinero birds appeared at the farm, departing as fermentation finished. Their fleeting visit gave the coffee its name. The outcome is a cup that feels serendipitous yet precise, alive with tropical intensity and complexity.
 
Cup Character
Persimmon and mango upfront, with strawberry and mulberry brightness, anchored by a rich chocolate truffle base. The cup is winey, layered, and smooth, with a rare balance of vibrancy and depth.
