A Rare Flight of Stillness
Arlam Aguirre is the newest coffee to join the Mythic class of Roastersaurus, the rarest and most refined of them all. Mythics are coffees that exist only once, never the same again. They are precise, fleeting, and luminous.
Grown at 1,750 masl in the highlands of Huehuetenango, Guatemala, this washed Gesha moves with quiet grace. Though fully washed, it carries a honey-like texture that defies expectation, a reminder that even the purest forms can blur their own boundaries.
This release also marks the first gold foil Roastersaurus card and the first reveal of Swoop, a movement defined by glide, balance, and stillness in motion.
Guatemalan Gesha in a New Moment
Over the last two years, Gesha from Guatemala has begun to show something exciting. Early expressions showed hints of florality and sweetness. More recent lots — including this one — have become elegant, silky, and naturally sweet without relying on fermentation for intensity.
Arlam’s Gesha is part of this shift. It expresses variety through terroir rather than force, offering clarity and a honey-like texture that feels distinctive to Huehuetenango.
About the Producer
Arlam Aguirre and his partner Yoesmi are members of ASIAST, a smallholder cooperative in San Antonio Huista dedicated to ecological and sustainable farming.
Arlam is an agronomical engineer and former Anacafé technician who brings deep technical skill to his craft. Together with his brother Klisman, who manages processing and drying, he cultivates coffees that balance biodiversity, community, and clarity in the cup.
About the Coffee
This Gesha lot was grown at El Aguacate, Arlam’s farm in Agua Dulce, Huehuetenango, at 1,750 masl. It is handpicked in just two passes, selecting only ripe and overripe cherries for concentrated sweetness and even development. The cup shows the purity of a washed coffee with the lush, silky texture more often seen in honeys. Each layer moves in harmony, unfolding with poise and calm precision.
The Process
Only ripe and overripe cherries are harvested, floated, and pulped the same day. The coffee is dry fermented for two days in roofed open tanks, then double washed to remove mucilage. It is soaked in clean water for 24 hours before being dried slowly on raised African beds for up to ten days.
This rhythm creates clarity without losing texture, the serene balance at the heart of its Mythic flight.

Peach, jasmine, and bergamot glide through orange blossom and lemongrass, anchored by milk oolong texture and a smooth, lingering aftertaste. Creamy and bright, sweet yet composed, a coffee that moves like still water and glows like air.
