Microraptor is here—and it’s a rare treat you won’t want to miss! The first coffee to bear the Microraptor name, this exceptionally limited release comes from Beneficio La Chumeca in Costa Rica. Produced in small quantities, this coffee is unlike any other, showcasing the incredible complexity and flavor potential of Capulinero—a process born from the perfect storm of nature and serendipity.
About the Coffee
La Chumeca exclusively produces natural coffees that are shaded by banana and guineo trees, which slow cherry maturation and create the perfect environment for complex, sweet flavors. The cherries are picked at 22 degrees Brix, ensuring maximum sweetness and ripeness.
Capulinero Process
The Capulinero process is an accidental innovation. During fermentation, unexpected rains forced the coffee to go through a three-phase fermentation process: starting anaerobic, then moving to oxidative fermentation, and finishing back anaerobic. Interestingly, Capulinero birds appeared during this time, and just like the rains, they left when fermentation was complete. This coincidence gave the coffee its name.
The Cascara
In addition to the exceptional coffee, we’re offering the cascara from the same cherries. Processed with the same care and attention, the cascara is a unique treat that mirrors the coffee’s complexity. After the coffee is removed from the cherry, the fruit is sent to a local expert in dried fruit processing, resulting in the dried cherry known as cascara. For those unfamiliar, cascara can be brewed into a tea-like infusion. When I tasted the cascara, I knew it had to be released alongside the coffee, as both are extraordinary in their own right.
Tasting Notes
Expect tropical notes of persimmon and mango, with berry-like flavors of fresh strawberry and mulberry, and a rich chocolate truffle base that ties everything together. This coffee is winey, layered, complex, and smooth—truly one-of-a-kind.
